
So I guess it’s official, summer is ending. Where did August go? We have a couple more precious days to enjoy, so I thought it was the perfect time to share my favorite summer recipe: Cucumber Mango Salsa.
This salsa is very versatile. It can be used as a marinade for chicken, served as a side dish or as an appetizer with chips.
Let’s get into it!
Cucumber Mango Salsa
Ingredients
- 1 mango, peeled, seeded and diced
- 1 cucumber, peeled, seeded and diced
- 1/2 cup diced red onion
- 1 clove garlic, minced
- 1/2 cup chopped fresh mint
- 1/4 cup lime juice
- 1/2 cup extra virgin olive oil
- salt and pepper
Combine mango, cucumber, onion, garlic and mint. Stir in lime juice and olive oil. Season with salt and pepper to taste.
Serve with grilled chicken. Marinade the chicken in 1/2 of the salsa mixture for 30 min to an hour. Serve the remaining mixture on top and enjoy!
